Got Zucchini?



I saw this recipe on a Food Network commercial and since I had all the ingredients and a lot of zucchini on hand I decided to give it a try. It was very easy and so yummy. Macy loved them too.


So if you are looking to use up some of your zucchini, give it a try.


Zucchini Parmesan Crisps

recipe from Ellie Krieger


cooking spray

1 tablespoon olive oil

2 medium zucchini

1/4 cup freshly grated parmesan

1/4 cup plain breadcrumbs (I used garlic and herb, because that is what I had)

1/8 teaspoon salt

freshly ground black pepper


Directions


Preheat oven to 450.


Coat a baking sheet with cooking spray.


Slice the zucchini into 1/4 inch thick rounds. In a medium bowl, toss the zucchini with the oil In a small bowl combine the parmesan, breadcrumbs, salt and pepper. Dip each slice into the mixture coating each side evenly, pressing the mixture to stick. Place in a single layer on the coated baking sheet. Bake unto browned and crispy for 25-30 minutes. Serve immediately.

We had the zucchini for dinner tonight with fresh corn and cheese-tomato sandwiches. It was great!!
