Sugar and Spice to Infinity and Beyond

After a pep talk Monday morning from my mom and consults with sisters and sisters-in-law, we officially began potty training Macy. She started off really well (just one wet accident while I was on the phone) but then she insisted on putting her diaper back on. Not wanting to push it, we called it a day. Tuesday and Wednesday were busy so we resumed today.

All morning and afternoon she has done perfectly with no accidents. But she refuses to wear the cute undies I bought for her so I decided to take her to Target so she could pick out her own. We almost made it out of the store with some adorable Hello Kitties. I say "almost" because then she spotted these:


And who I am to squelch the pure delight of my little one?


Hopefully she won't ask what the flap in the front is for.

One Dozen

We celebrated our 12 year wedding anniversary with a family vacation to the Zermatt Resort in Midway. We loved every minute and wished we stayed another night. We rode the carousel, fed the goats, swam and got massages.

Children's Discovery Museum



We rode Trax down to the Gateway to go the museum with the Oettlis and the Cooks. The museum is so much fun and Buddy, like always, took good care of Macy. It is truly adorable and she worships him. He is such a nice boy. I will his help when school starts.

We played in the fountains after the museum. Well, the Oettlis played in the fountains while Macy ran away to ride the elevator and escalator.

After our long day, Jenn and I were commenting as we were on Trax on the way home how smoothly everything has gone. That was when a man on the train told us we were on the University line. So, a little detour and we made it home. It was Macy's first Trax ride and she liked it a lot. We love all the fun we have had this summer with our cousins.

P.S.  I wanted to show the adorable train Buddy painted for Macy.  He put her name on it and the number two for her age.

Got Zucchini?



I saw this recipe on a Food Network commercial and since I had all the ingredients and a lot of zucchini on hand I decided to give it a try. It was very easy and so yummy. Macy loved them too.


So if you are looking to use up some of your zucchini, give it a try.


Zucchini Parmesan Crisps

recipe from Ellie Krieger


cooking spray

1 tablespoon olive oil

2 medium zucchini

1/4 cup freshly grated parmesan

1/4 cup plain breadcrumbs (I used garlic and herb, because that is what I had)

1/8 teaspoon salt

freshly ground black pepper


Directions


Preheat oven to 450.


Coat a baking sheet with cooking spray.


Slice the zucchini into 1/4 inch thick rounds. In a medium bowl, toss the zucchini with the oil In a small bowl combine the parmesan, breadcrumbs, salt and pepper. Dip each slice into the mixture coating each side evenly, pressing the mixture to stick. Place in a single layer on the coated baking sheet. Bake unto browned and crispy for 25-30 minutes. Serve immediately.

A Day at the Beach: Utah Style

My sister-in-law, Heather, discovered an awesome little reservoir with sandy beaches and shallow water. I think it is called Black Ridge Reservoir. We had a great day with the cousins. I felt like I had been on a mini vacation. It is maybe a little sad just how happy this little place made me.

Just pretend the water is a gorgeous blue.
